Апстракт: Стругана погача, обичајни и обредни хлеб заступљен на подручју централног Косова, представља значајан културни елемент српске заједнице, који се јавља у различитим ситуацијама: при обележавању важних фаза животног циклуса појединца, унутар славских пракси, прослава верских празника и народног обичаја гостопримства, и др. Заступљеност стругане погаче у обичајима, различите здравице, веровања, забране, али и сентименти који је прате, на основу анализе теренске грађе, посматрани су као релевантни показатељи њене улоге у друштвеном животу Срба на централном Косову. Неретко, посредством различитих медија, на њен значај са аспекта културног континуитета указују интерно расељена лица и други Срби који су својевремено живели на овом подручју. Разматрајући умеће и историју израде стругане погаче, у склопу судија о утицају различитих видова миграција на концептуализацију културног наслеђа, рад се бави испитивањем симболике која се погачи приписује. На тај начин она се издваја као маркер националне и с њом повезане религијске припадности Срба са централног подручја Косова, док се истовремено проблематизују ефекти деконтекстуализоване промоције нематеријалног наслеђа на статус овог елемента у традиционалној култури Срба.

Summary: This paper considers the art of making scraped bread “strugana pogača” as an element of the intangible cultural heritage of Serbs from Kosovo and Metohija. This skill is primarily geographically related to the central part of the Kosovo basin, even though it is also evident in other areas. Symbolizing both change and continuity, scraped bread is part of customs related both to life cycle rituals and also to yearly rituals, as well as to the celebration of a family’s patron saint’s day, to weekend family gatherings, to hospitality praxis and other important commemorations. The type of bread called “pogača” is a geographically broadly present cultural phenomenon, and the specific characteristics of scraped bread in the above mentioned region are drawn from its cultural usages, and the praxis of its decoration and the values attributed to it. Through fieldwork focused on local customs and rituals that involve scraped bread, as well as through observation of various public presentations of this element displayed by persons who forcedly or otherwise migrated from the mentioned region, symbolic dimensions of the chosen heritage are analyzed. Therefore, by considering the beneficial impetus given to locals by the wider community as well as by considering the possibly questionable effects of heritage promotion, popularization and commercialization, multiple outcomes of migration are outlined and their effects on the remaining local community contextualized. Therefore, in conjunction with previous research on heritage interpretation, this paper examines strong local identifications of Serbs on Kosovo and Metohija through praxis of the making of, and the cultural significance of, scraped bread.
